A car is a complicated piece of machinery. Years ago when you went scouting for a collector car, which then were call "old cars" you had to shuffle along back roads, casting long looks through farmers' barnyards, peering around the back building, and scanning the edge of fields. Any car can be restored, all you need is the right parts, right tools, and the desire to do the work, but if this is your first project the likelyhood of doing a successful job of restoration on a car that is completely our of commission is very low. Start with a car that runnning or in driving condition, and only need moderate restoration. Find out what you can do yourself, and what will need to be hired out. Get some idea from local shops what they charge to do the work you cannot do, and will need done.
If this is a vintage car or antique. These are old vehicles, maybe 30-70 year old cars. They are not going to be perfect, and even if they were the technology that went into building them is still many years old. If you want an vintage car with character, accept that it will take lots of work to restore it.
